Mini Apple Cinnamon Muffins with Our Apple Cinnamon Granola. Yum-Yum-Yum!
These bite-size muffins with a granola-crumb topping are yummy.

Yield: 16 mini muffins
Ingredients:
1 1/2 cups gluten-free flour (of regular all-purpose flour)
1/2 cup pure cane sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/3 cup vegetable oil
1 egg
1/3+ cup almond milk (or regular milk)
1 Fuji apple, (diced and sautéed in 1 tbls butter with 1 tsp ground cinnamon)
2/3 cup Judine's apple cinnamon granola
For the crumble:
1/4 cup cane sugar
1/4 cup butter cubed
1 teaspoon ground cinnamon
1/3 cup gluten-free flour (or regular flour)
1/3 cup Judine's apple cinnamon granola
Directions:
Step 1
Preheat oven to 400 degrees F. Grease mini muffin cups.
Step 2
Combine 1 1/2 cups flour, 1/2 cup sugar, salt, and baking powder in a medium mixing bowl.
Step 3
Place vegetable oil into a 1 cup measuring cup: add the egg and enough milk to reach the 1 cup line. Pour liquid mixture into the flour mixture and combine. Fold in the sautéed diced apple and 2/3 cup granola. Fill the muffin cups, and sprinkle with granola-crumb toping mixture.
Step 4
To make the granola-crumb topping: mix together 1/4 cup butter, 1/4 cup sugar, 1 teaspoon cinnamon, 1/3 cup gluten-free flour (or regular all-purpose flour), and 1/3 cup granola.
Step 5
Bake for 20-22 minutes in the preheated oven, until done.
