Orange Cranberry Loaf, with our Cranberry Granola.

Yield: 1- 9x12inch loaf
Preheat oven to 325 degrees fahrenheit.
Grease loaf pan, set aside.
Ingredients:
2 Cups Gluten-Free Flour (or Regular All-Purpose Flour)
1 Cup Judine's Cranberry Granola
1/2 Cup Cane Sugar
1 teaspoon Baking Powder
1/4 teaspoon Baking Soda
1/2 teaspoon salt
1/2 Cup Dried Cranberry
1 1/2 Orange, Zest
1 Lemon, Zest
1/4 teaspoon Orange Extract, optional
1/3 Cup Melted Butter
2 Tablespoon Almond Milk (or Regular Whole Milk)
1 1/2 Orange, Juiced (juice only)
2 Eggs, whole
Directions:
1. Mix dry ingredients (flour, sugar, salt, granola, baking powder & baking soda) together, evenly combine and set aside.
2. Whisk eggs set aside.
3. Combine: dried cranberry, zests, orange juices & extract, set aside.
4. Add whisked eggs to dry mixture, and combine.
5. Add cranberry-mixture, combine.
6. Add milk and evenly combine.
7. Fold in melted butter.
8. Place mixture in a greased loaf pan and bake at 325 degrees oven for 30-40 minutes until done.
9. Remove, allow to cool, and enjoy.
***Tip: Test for doneness; place a toothpick in the middle of the baked loaf; if the toothpick comes out dry, the loaf is done.
